Vanilla and Peanut Butter Protein Blondies

Ingredients

  • 110ml coconut oil, plus a little extra for greasing to tin
  • 50g vegan dark chocolate
  • 150g gluten-free flour
  • 2 scoops (68g) Vanilla Vega® Essentials
  • 150g peanut butter
  • 150g soft brown sugar
  • 180ml plant-based drink, such as almond

Method

  1. Preheat the oven to 180° Celsius
  2. Grease and line a small square baking tray with parchment paper. Roughly chop the chocolate.
  3. Add the flour and Vanilla Vega® Essentials to a large mixing bowl and stir to combine.
  4. Melt 110ml of coconut oil in a small pan over a low heat. Stir in the peanut butter and brown sugar to combine. Mix this melted mixture along with the plant-based drink into the flour. Stir to combine into a batter, then fold in half the chocolate.
  5. Spoon the cake batter into your prepared tin and sprinkle over the remaining chocolate.
  6. Bake in the oven for 20-25 minutes or until cooked through. Leave to cool a little before cutting into squares.
