Ingredients
400g pack Essential Waitrose British Lean Turkey Breast & Thigh Mince
25g wholemeal breadcrumbs
25g pack fresh chives, chopped
1 litre Cooks’ Ingredients Chicken Stock
2 tbsp soy sauce
1 carrot, diced
1 red onion, diced
1 courgette, diced
195g can sweetcorn, drained
4 vermicelli nests
Method
Mix the turkey mince with the breadcrumbs and half the chives, season and mould into 12 balls.
Bring the stock and soy to the boil in a large saucepan. Add the carrot, onion and turkey dumplings. Cover and cook for 10 minutes.
Add the courgette, sweetcorn and vermicelli, and cook for a further 5 minutes until the dumplings are cooked through with no pink meat. Stir in the remaining chives and serve.
