Thai Style Turkey Burger

Thai Style Turkey Burger
  • 250g turkey breast mince
  • 50g fresh white breadcrumbs
  • 1 tbsp Thai curry paste
  • 3 spring onions, finely chopped
  • 1 small egg, beaten
  • 2 tbsp roughly chopped fresh coriander
  • 2 tsp rapeseed oil
  • To serve

  • 2 burger buns, lightly toasted
  • Fresh coriander, red onion, baby leaf salad, fresh red chilli
  • Thin slices of cucumber
  • Sweet chilli dipping sauce

Ingredients

  • 250g turkey breast mince
  • 50g fresh white breadcrumbs
  • 1 tbsp Thai curry paste
  • 3 spring onions, finely chopped
  • 1 small egg, beaten
  • 2 tbsp roughly chopped fresh coriander
  • 2 tsp rapeseed oil
  • To serve
  • 2 burger buns, lightly toasted

Method
  • Combine the mince, breadcrumbs, curry paste, onions, coriander and egg in a bowl and mix well. Season to taste. Shape the mixture into 2 burgers and chill for 20 minutes.
  • Brush the burgers with oil and cook under a medium hot grill or a barbecue for 7 minutes either side, or until cooked through.
  • Serve with toasted rolls, baby leaf salad, thin slices of cucumber, slices of red onion, fresh red chilli, coriander and sweet chilli dipping sauce.
