Skinni peppered beef steaks with baked sweet potato and low fat slaw

These Skinni peppered beef steaks are made from the leanest cuts of beef and coated in a delicious parsley and pepper crumb. They are suitable for summer BBQs, grill, but can also be pan-fried with a few sprays of oil. They are an excellent low fat, low carb, high protein option.

Ingredients

  • 1 pack Skinni Peppered Beef Steaks
  • 2 large sweet potatoes
  • 1/2 bag leafy salad
  • 1 tbsp balsamic vinegar

For the Slaw

  • 1 head white cabbage
  • 1 onion
  • 1 small carrot
  • 3 tbsp extra light mayo
  • 1 tbsp fat free creme fraiche
  • 1 tbsp fresh chives, chopped

Method

  1. Heat the BBQ, grill or pan. If using a frying pan, add a few sprays of oil.
  2. Prick the sweet potatoes with a fork and bake in a hot oven for roughly 45 minutes. You need to time it so that they can be eaten straight from the oven as they are prone to waterlogging if left too long. These can also be cooked in foil on the BBQ.
  3. To make the slaw, finely shred all the ingredients with a knife. Feel free to use a machine but preferably not a grater.
  4. Mix in the mayonnaise and the creme fraiche. It will hold together well for a few hours but not overnight. Add the chopped chives if using.
  5. Cook the Skinni Peppered Beef Steaks for about 2 minutes on each side, over a high heat. You want to aim for just done; not overdone yet not rare.
  6. Serve the cooked steaks with the sweet potato topped with slaw. Add salad leaf dressed with the balsamic vinegar and a scatter of good salt.

For this recipe, the steaks have been served with a baked sweet potato and a low-fat slaw. You can bake the potatoes in the oven, or stick them in the BBQ coals wrapped in foil. Sweet potato cooks faster than white potato, so they will be done in about 45 minutes. There is also a creamy slaw – naked slaw might be virtuous, but there are times when only proper coleslaw will do! Extra light mayonnaise is virtually fat free, but it can clag a little bit, which the fat-free creme fraiche helps prevent.
