Raspberry Pots with Raspberry Sauce

Raspberry Pots with Raspberry Sauce
  • 400g fresh raspberries
  • 75g clear honey or agave syrup
  • 4 medium egg whites
  • 300g low-fat yoghurt
  • 6 sheets gelatine

Ingredients

  • 400g fresh raspberries
  • 75g clear honey or agave syrup
  • 4 medium egg whites
  • 300g low-fat yoghurt
  • 6 sheets gelatine

Method
  • First make the raspberry sauce. Reserve 12 of the raspberries to use as a garnish, and place the remaining berries in a pan with half of the honey. Gently cook over a medium heat for 4-5 minutes, stirring until the fruit collapses. Place a fine sieve over a bowl and pass the fruit through to deseed. Cool for 10 minutes, then keep in the fridge until needed.
  • In a clean bowl, whisk the egg whites for 2-3 minutes or until stiff peaks form. Place the yoghurt in a bowl, stir in 200ml of the raspberry coulis and the remaining honey and beat to combine.
  • Soak the gelatine in cold water for 5 minutes and drain well. Place the gelatine in a large jug, add 3 tablespoons of boiling water and leave until the gelatine has dissolved. Add to the yoghurt mixture, then beat in a third of the egg whites. Fold in the remaining egg whites.
  • Gently divide the mixture between four to six glasses. Chill for 4-5 hours. To serve, decorate with reserved raspberries, with the remaining raspberry sauce in a small jug or ramekin on the side.
