Pea and mint houmous

Pea and mint houmous

Ingredients

  • 300g (2 cups) peas
  • Fresh or frozen 2 spring onions, trimmed
  • 10 fresh mint leaves
  • 2 tbsp tahini
  • 1 tbsp extra-virgin olive oil zest and juice of ½ lemon
  • Pink Himalayan salt or sea salt and freshly ground black pepper

Method

  1. Cook the peas in a saucepan of boiling water for about 3 minutes, then drain.
  2. Finely slice half a spring onion and set aside.
  3. Add the peas to a food processor with the remaining 1½ spring onions, the mint, a splash of water, the tahini, olive oil and lemon juice.
  4. Whizz to your desired consistency, I like it to be quite chunky.
  5. Keep in the fridge until ready to serve, then sprinkle with the lemon zest and the sliced spring onion.
