Hot-shot Broccoli, Ginger, Lemongrass & Cashew Soup

This low-cal soup makes a perfect meat-free lunch

Hot-shot Broccoli, Ginger, Lemongrass & Cashew Soup
  • 500g broccoli or carrots, roughly chopped
  • handful of raw, unsalted cashew nuts
  • 1 lemongrass stick
  • thumb-sized piece of ginger
  • ½ chilli, deseeded (optional) and chopped
  • 1 small garlic clove or ½ large one, crushed or finely chopped
  • sea salt and black pepper
  • TO SERVE

  • coriander
  • toasted seeds

Ingredients

  • 500g broccoli or carrots, roughly chopped
  • handful of raw, unsalted cashew nuts
  • 1 lemongrass stick
  • thumb-sized piece of ginger
  • ½ chilli, deseeded (optional) and chopped
  • 1 small garlic clove or ½ large one, crushed or finely chopped
  • sea salt and black pepper

Method
  • Place all the ingredients into a large saucepan with 750ml of water and bring to the boil.
  • Reduce the heat and allow it all simmer until the carrots or broccoli are soft. This should take 6-7 minutes for the broccoli and 15 minutes for the carrots. Once tender, transfer everything to a blender and whizz until you have a smooth and creamy soup, or if you are using a stick blender keep it in the pan and blitz. For a thinner soup, simply add a little more water.
  • If you want to warm up the soup, reheat slowly in a pan before serving and top with a sprinkling of the coriander or crunchy seeds.
