Cater to everyone with these gluten-free fajitas from Quorn

Ingredients
2 tsp smoked paprika
1 tsp cumin
1 tsp ground coriander
½ tsp black pepper, plus extra to taste
½ tsp chilli powder
1 garlic clove, crushed
Zest 1 lime, plus wedges, to serve
300g pack frozen Quorn Pieces
3 tbsp vegetable oil
½ red onion, finely sliced
1 red pepper, deseeded and sliced
1 orange pepper, deseeded and sliced
150g mushrooms, sliced
Bunch fresh coriander, chopped
30g reduced-fat Cheddar cheese, grated
Salt, to taste
4 gluten-free tortilla wraps
4 tbsp low-fat soured cream, to serve
4 tbsp salsa, to serve
Method
Mix the paprika, cumin, coriander, black pepper, chilli powder, garlic and lime zest in a bowl and stir in the Quorn pieces. Ensure they are evenly coated, then cover and refrigerate for 30 minutes.
Heat two tablespoons of the oil in a large non-stick pan over a medium heat and add the Quorn. Cook for 5-7 minutes until cooked through. Remove from pan and keep warm.
Heat the remaining oil in the pan and add the onions. Cook for 2-3 minutes then add the peppers and continue cooking until they begin to soften. Add the mushrooms. Stir well and continue to cook for five minutes. Stir in the Quorn, season with salt and pepper and top with the cheese and coriander.
Warm the wraps according to the pack instructions and serve with the fajita mix, soured cream, salsa and lime wedges.
