Filo Cups with Smoked Beetroot Hummus

Ingredients

  • 2 large filo sheets
  • 2 tbsp olive oil
  • 150g Moorish smoked beetroot hummus
  • 10g chives, chopped
  • 50g feta, crumbled

Method

  1. Preheat the oven to 180°C/Gas Mark 4.
  2. Lay out one large filo sheet on a chopping board and brush with the olive oil all over.
  3. Top with the second sheet and cut into 12 x 12cm (5 inch) squares.
  4. Place the squares into the holes of a miniature muffin tin and push down to create little cups.
  5. They will all be different but that is part of the charm. Place in the oven and bake for 5-10 minutes or until hardened and golden.
  6. Remove and allow to cool.
  7. Transfer the hummus into a piping bag and then pipe into the filo cups.
  8. Top with the chopped chives and crumbled feta and serve immediately.
