Eyeball salad

Ingredients

100g Cherry Tomatoes
40g Black Olives
10g Mozzarella Pearls
15-20 Fresh Basil Leaves
1 tbsp. Balsamic Vinegar

Method

  1. Start by halving the cherry tomatoes, thinly slicing the black olives widthways and using the back of a spoon to crush the mozzarella pearls slightly. This may depend on the size of the pearls, if they are quite big you might want to slice then in half before crushing.
  2. On a large serving tray/platter, lay the basil leaves out flat and so they don’t overlap each other.
  3. Take the cherry tomato halves and place one in the centre of each basil leaf and then top each cherry tomato with a crushed mozzarella pearl. Place an olive slice on top of each mozzarella pearl.
  4. Finish with a drizzle of balsamic vinegar and then serve.
