Diabetes-Friendly Fish Tacos with Herby Slaw

Ingredients

  • 1 tbsp olive oil
  • 450g skinless mild-flavoured fish fillets, such as cod
  • ½ tsp chilli powder

For the Herby Slaw½ head cabbage, shredded

  • 20g fresh coriander leaves, chopped
  • juice of 1 lime

To serve

  • 8 x 15cm corn tortillas, warmed
  • 1 large tomato, chopped

Method

  1. Heat the oil in a frying pan over medium-high heat. Add the fish, sprinkle with the chilli powder, and cook for 2-3 minutes on each side until the fish starts to whiten around the outside and is easily flaked with a fork. Take off the heat and let cool slightly, then slice the fish into strips or bite-sized pieces. In a large bowl, stir together the cabbage, coriander and lime juice.
  2. To serve, divide the fish among the warmed corn tortillas, add a large spoonful of herby slaw to each taco, and top with chopped tomato.
