Creamy Avocado, Walnut & Spelt Rigatoni

Ingredients

  • 300g wholegrain spelt rigatoni or your pasta of choice
  • salt
  • olive oil
  • 3 avocados, stoned and peeled
  • 2 garlic cloves
  • drizzle of extra virgin olive oil
  • 2 tbsp lemon juice
  • salt and pepper
  • 200g walnuts
  • ½ leek, the white part, trimmed and sliced in thin rounds
  • 2 handfuls of parsley, chopped

Method

  1. Cook the pasta according to the packet instructions, then drain and set aside.
  2. Place the avocado in a mixer and blend with the garlic, a drizzle of extra virgin olive oil and lemon juice. Taste and adjust with salt and pepper. Serve with rigatoni and top with walnuts, leeks and parsley.
