Chicken Tagine

Ingredients

  • pinch, ground cinnamon
  • pinch, ground coriander
  • pinch, ground cumin
  • 75g raw chicken thighs, skinless and boneless
  • 40g butternut squash, cubed
  • 1 carrot, chopped
  • 400ml chicken stock
  • 80g tinned chickpeas
  • 100g tinned chopped tomatoes
  • 3 dried apricots, chopped
  • 1 clove garlic, minced
  • 1/3 red onion, chopped
  • 1 large sprig parsley, chopped

Method

  1. Rub the spices into the chicken and pan fry until brown on all sides.
  2. Transfer to a slow cooker, adding all the remaining ingredients except the parsley, and cook on low for 4 hours. Serve, topped with parsley.
