Ingredients
Oil, for greasing
2 eggs
150g runny honey
Pinch salt
100g gluten-free plain flour
50g pure cacao powder
1 tsp gluten-free baking powder
150g cooked beetroot
Method
Preheat the oven to 170C/fan 150C/Gas 3. Grease a small, square, deep-sided baking tray with a little oil and line with non-stick baking parchment.
Put the eggs, honey and salt in a food mixer and mix for 5 minutes.
Sieve the flour, cacao and baking powder and combine well in a bowl.
Blitz the beetroot using a handheld blender and add to the eggs in the food mixer together with the sieved dry ingredients. Mix well and pour into the prepared tray.
Bake for 30 minutes. Leave to cool and then cut into 12 squares.
