Cacao & Beetroot Brownies
  • Oil, for greasing
  • 2 eggs
  • 150g runny honey
  • Pinch salt
  • 100g gluten-free plain flour
  • 50g pure cacao powder
  • 1 tsp gluten-free baking powder
  • 150g cooked beetroot

Ingredients

  • Oil, for greasing
  • 2 eggs
  • 150g runny honey
  • Pinch salt
  • 100g gluten-free plain flour
  • 50g pure cacao powder
  • 1 tsp gluten-free baking powder
  • 150g cooked beetroot

Method
  • Preheat the oven to 170C/fan 150C/Gas 3. Grease a small, square, deep-sided baking tray with a little oil and line with non-stick baking parchment.
  • Put the eggs, honey and salt in a food mixer and mix for 5 minutes.
  • Sieve the flour, cacao and baking powder and combine well in a bowl.
  • Blitz the beetroot using a handheld blender and add to the eggs in the food mixer together with the sieved dry ingredients. Mix well and pour into the prepared tray.
  • Bake for 30 minutes. Leave to cool and then cut into 12 squares.

Beetroots are high in potassium, which is essential for healthy muscle and nerve function.
