Ingredients

  • 1 tsp vegetable oil
  • 2 tomatoes, chopped
  • ½ small red onion, chopped
  • 1 spring onion, sliced
  • 1 jalapeño pepper, finely chopped
  • 1 garlic clove, crushed
  • Pinch salt
  • 1 tsp pure maple syrup
  • 2 eggs, beaten
  • 1 wholemeal tortilla
  • 15g reduced-fat Cheddar cheese, grated

Method

  1. Put the oil in a frying pan over a medium heat. Combine the vegetables, jalapeño and garlic with a pinch of salt, then add to the pan and mix to create a salsa. Add the maple syrup to the salsa then spoon into a bowl and set aside.
  2. Heat the used salsa pan. Pour in the eggs and scramble them using a wooden spoon until they’re firm and cooked to your liking.
  3. Lay the tortilla flat and spoon the eggs at one end. Add the maple salsa and top with the cheese. Roll it all up and enjoy.
