Braeburn Apple, Chilli & Pea Spread

Ingredients

For the spread

  • 80g frozen peas
  • 150g Braeburn skin-on apples, roughly sliced
  • 1 tbsp extra virgin olive oil (plus extra to drizzle on toast)
  • 1 tsp paprika
  • 1/2 tsp dried chilli flakes
  • Pinch of salt and pepper
  • Ground cumin and fennel seeds

To serve

  • 4 slices of sourdough or rye bread

Method

  1. Blend the spread ingredients together in a food processor or bullet blender – you’ll be left with a rough textured spread. Add a splash of water to the blender to loosen the mixture as needed. Try ground cumin and fennel seeds in addition to the spices.
  2. Toast the bread and spread thick amounts of spread over the slices. Drizzle with extra virgin olive oil.
