Barbecued Sardines with Orange & Parsley

Barbecued Sardines with Orange & Parsley
  • 6 whole sardines, gutted
  • 1 orange, sliced
  • a small bunch of fresh flat leaf parsley, chopped
  • PLUS

  • 4 tbsp extra virgin olive oil, salt, ground black pepper

Ingredients

  • 6 whole sardines, gutted
  • 1 orange, sliced
  • a small bunch of fresh flat leaf parsley, chopped
  • PLUS
  • 4 tbsp extra virgin olive oil, salt, ground black pepper

Method
  • Arrange the sardines and orange slices in a single layer in a shallow dish. Sprinkle over the chopped parsley and season with salt and pepper.
  • Drizzle the olive oil over the sardines and orange slices and gently stir to coat well. Cover the dish with clear film and chill for 2 hours.
  • Remove the sardines and orange slices from the marinade and cook the fish over the barbecue for 7-8 minutes on each side, until cooked through. Serve immediately.
