Ingredients
6 whole sardines, gutted
1 orange, sliced
a small bunch of fresh flat leaf parsley, chopped
PLUS
4 tbsp extra virgin olive oil, salt, ground black pepper
Method
Arrange the sardines and orange slices in a single layer in a shallow dish. Sprinkle over the chopped parsley and season with salt and pepper.
Drizzle the olive oil over the sardines and orange slices and gently stir to coat well. Cover the dish with clear film and chill for 2 hours.
Remove the sardines and orange slices from the marinade and cook the fish over the barbecue for 7-8 minutes on each side, until cooked through. Serve immediately.
