Banana Almond Pancakes

Ingredients

  • 1 ripe banana, mashed
  • 25g flaxseed, ground
  • 2 tbsp almond butter
  • 2 eggs
  • 2 tbsp maple syrup
  • 1 tbsp vanilla bean paste
  • 1 tsp ground cinnamon
  • a pinch of salt
  • 3 tbsp coconut oil

Method

  1. Combine all the ingredients except the coconut oil in a large bowl and mix thoroughly until smooth. Taste and add more maple syrup, cinnamon or salt if needed.
  2. Melt a little of the coconut oil in a frying pan over a medium heat. Pour the mixture into the pan and cook on each side for 2-3 minutes until golden.
  3. Serve immediately with the chia berry compote and extra maple syrup, banana and nut butter if desired. Serve with a chia berry compote.
