Autumnal pear and blackberry porridge

Mix up your breakfasts with this autumnal pear and blackberry porridge.

Soft poached pears and plump juicy blackberries are the perfect match to this lightly cinnamon spiced apple porridge - the ideal way to celebrate World Porridge Day on 10th October 2019.

Ingredients

  • 1 large pear, halved, cored and cut into 6 wedges
  • 85g (3oz) blackberries
  • 150ml apple juice
  • 1 mint sprig, plus a few leaves for decoration
  • 100g (4oz) White’s Organic Jumbo Oats
  • 700ml sweetened almond milk
  • 1/2 tsp ground cinnamon
  • 1 red skinned apple, coarsely grated
  • 2 tbsp White’s Apple, Cranberry and Raspberry Granola (optional)

Method

Place the pear, blackberries, apple juice and mint sprig into a small saucepan, cover and heat very gently for 12-15 minutes until the pears are softened and the poaching liquid is pink. (The poaching liquid can be boiled down to a thickened syrup if liked). Discard the mint sprig.

Meanwhile, place the oats, almond milk and cinnamon into a saucepan over a medium heat and bring steadily to a simmer stirring for 4-5 minutes until thick and creamy. Stir in the red apple and spoon into shallow serving bowls. Spoon over the pear and blackberry compote.

Scatter over the Granola (if using) and mint leaves and serve immediately.
