Apple & Parsnip Soup

This simple and delicious soup is only 170 calories per serving

Apple & Parsnip Soup
  • 1 heaped tsp cumin seeds
  • 6 cardamom pods
  • 1 heaped tsp turmeric
  • 1 heaped tsp ginger
  • 2 onions, diced
  • 2 garlic cloves, chopped
  • 20g butter
  • 500g parsnips, diced
  • 1 Bramley apple, diced
  • 1 vegetable stock cube

Ingredients

  • 1 heaped tsp cumin seeds
  • 6 cardamom pods
  • 1 heaped tsp turmeric
  • 1 heaped tsp ginger
  • 2 onions, diced
  • 2 garlic cloves, chopped
  • 20g butter
  • 500g parsnips, diced
  • 1 Bramley apple, diced
  • 1 vegetable stock cube

Method
  • Dry roast the cumin and cardamom seeds for 2-3 minutes until golden brown, then remove them from the pan and crush together with a pestle and mortar along with the turmeric and ginger.
  • Dice the onion and chop the garlic before heating the butter in a pan. Add the onions to the pan.
  • Once the onions have softened on a low heat, add the chopped garlic and crushed spices and continue to stir well for a few more minutes.
  • Add the diced parsnips and apple to the pan.
  • Pour in two litres of stock and leave to simmer for an hour. Finally, use a blender to combine all of the ingredients and serve.
