Smashed Chickpeas with Grilled Courgette

Ease joint pain with this delicious recipe

Smashed Chickpeas with Grilled Courgette
  • 1 tbsp runny honey
  • 2 tbsp sunflower oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 2 x 400g tins chickpeas, drained and rinsed
  • 3 tbsp light crème fraîche
  • 1 tsp cumin seeds
  • 2 medium-sized courgettes
  • 1 lemon, zested and juiced
  • 75g tahini paste
  • 50g feta, crumbled
  • 3 tbsp pomegranate seeds

Ingredients

  • 1 tbsp runny honey
  • 2 tbsp sunflower oil

  • 3 tbsp light crème fraîche
  • 1 tsp cumin seeds
  • 2 medium-sized courgettes
  • 1 lemon, zested and juiced
  • 75g tahini paste
  • 50g feta, crumbled
  • 3 tbsp pomegranate seeds

Method
  • Heat a tablespoon of oil in a large frying pan and add the onion. Sauté for 8-10 minutes until soft and slightly golden. Add the garlic and cook for a further 3 minutes, then add the chickpeas and cook for another minute.
  • Turn off the heat, then add the crème fraîche and three tablespoons of warm water. Mash until the chickpeas are broken down but are still chunky. Season, then cover and keep warm.
  • Place a small frying pan over a medium-high heat and add the cumin seeds. Toast for 1-2 minutes until fragrant, then transfer to a pestle and mortar and grind coarsely.
  • Peel the courgettes into long ribbons and toss in with the cumin seeds, lemon zest and a tablespoon of oil. Set aside.
  • Warm a griddle pan over a medium-high heat and add the courgette to the pan in three batches, cooking for 2-3 minutes and turning over occasionally until cooked with some griddle marks. Transfer to a plate, cover and keep warm.
  • Whisk together the tahini, two tablespoons of lemon juice, honey and 100ml of warm water until smooth and runny, but not too thin.
  • Arrange the smashed chickpeas on plates and top with the courgettes. Scatter over the feta and pomegranates and serve with the tahini sauce for dipping and drizzling.
